In answer to the Baking Industry’s struggle to replace Potassium Bromate as an oxidizer, Edlen created     EDC-2000. EDC-2000 is a free flowing powder dough conditioner and bread improver and is completely BROMATE FREE.

It consists of Ascorbic acid, Azodicarbonamide (ADA), Fungal Alpha Amylase, Emulsifiers and other edible excipients.

USAGE INSTRUCTIONS: 

  1. Dissolve EDC-2000 in water & mix with 100 kg of flour.
  2. Dissolve 454 gm of EDC-95 in water and add to the mix.
  3. Use enough yeast to make bread proof/rise within 2 to 3 hours.
  4. Mix dough continuously until properly done.
  5. Allow dough to rise 2 to 3 hours.
  6. Minimum dough weight 200 gm as closed pan.

PACKAGING & STORAGE: 
40 gm foil pack, 400 packs to a box. Bulk is available in 20 kg polylined bags.

Store in cool dry environment. Maximum storage temperature is 110°F.

GOVERNMENT REGULATIONS:
Complies with USP, NF or FCC specifications where applicable in the USA. All ingredients are in strict compliance with the definitions and standards for use in bakery products as set forth by the Federal Food, Drug and Cosmetics Act of the USA, in CFR Title 21, Section 17.1.

NOTE: We warrant that EDC-2000 is completely Bromate free.
